Well it seems that summer is still here, and with a few more warm days ahead its the perfect time to make some lollies. I make these for my two and they love them. I use canned coconut cream, this is different to coconut milk its much richer, you can buy from most supermarkets now. Adding banansa and a touch of stevia is all you need and these are yummy.
Coconut cream is a rich and healthy source of fat, composed of mainly medium chain fatty acids (MCFA) these are important for energy production, MCFA’s supply quick energy to cells, active cells help to speed up metabolism and burn fat.
Coconut cream also contains lauric acid, capric acid and caprylic acid, these fatty acids all help to fight infections and keep our immune systems healthy.
So all in all these are a pretty healthy, tasty snack or dessert.
- 2 ripe bananas
- 2 cans of coconut cream
- 1 tsp stevia
- Place all ingredients into a blender, blend for 1 minute until silky smooth
- Pour into lolly moulds and freeze for 2-3 hours
